What to Eat (menus & recipes)
Tired of eating the same old gluten-free food? Change it up! Click around on this page for links to recipes we love. These recipes are all family favorites.
I've made notes on substitutions for gluten-free ingredients, if necessary. As always, be sure to read your labels and make sure that the products you use are gluten-free. (And if you need help figuring out what you can buy that's ready-made and gluten free, please see this post.)
CHICKEN
Artichoke Chicken
This is just incredibly good-- and super easy!
Asian Orange Chicken
Be sure to use gluten-free soy sauce in this recipe, and substitute your favorite GF flour for the all-purpose flour used to coat the chicken.

Chicken Lettuce Wraps
Make sure your soy sauce is gluten-free!
Crockpot Chicken & Black Beans
Favorite Chicken Nuggets
I make a double batch and freeze these for a quick lunch idea.
Slow Cooker Tortilla Soup
Make sure you are using gluten-free enchilada sauce for this recipe. I use La Victoria.
White Chicken Enchiladas
Use your favorite GF flour or corn starch instead of all-purpose flour in this recipe. I also skip the picante sauce.
Teriyaki Chicken
Make sure your soy sauce is gluten-free. This is delicious and simple!
Slow Cooker Green Chile Pork Tacos
Don't change a thing- this yummy recipe is gluten-free (and dairy-free!) just as it is.
Avocado Chicken Salad
Perfect for lunch or perhaps for dinner on a hot summer's day. Be sure to use lots of lime juice, and don't skimp on the green onions or avocados, either.
BEEF
BBQ Meatballs
Be sure to use certified gluten-free oats in this recipe. Also substitue GF flour for all-purpose flour. Instead of mixing up the sauce, I use a bottle of Heinz chili sauce.

Broccoli Beef
Instead of flour, I use corn starch. Also, be sure that your beef broth is gluten-free (I use Pacific Foods brand), and that your soy sauce is gluten-free. I actually double the sauce in this recipe. Sometimes I serve it over rice, and sometimes I use Thai rice noodles. Very tasty!

Pot Roast

Baked Ziti
I use Ancient Harvest Quinoa noodles in a macaroni shape for this meal. Make sure your spaghetti sauce is gluten free (I use Classico brand).
Macaroni & Cheese
I use Ancient Harvest Quinoa noodles in a macaroni shape for this meal.
Jamie's Minestrone Soup
I use Pacific Foods brand chicken broth and Ancient Harvest Quinoa seashell noodles for this delicious soup. This tastes a lot like the minestrone at the Olive Garden!
BREAKFAST

I love this mix for a spicy morning cake.

Pancakes or Waffles
We love this mix for pancakes and waffles! We tend to mix it up just a bit thinner than the directions call for.
Pumpkin Cinnamon Rolls
These are simply divine!
SIDE DISHES & APPETIZERS

Apple Crisp
I use Pamela's Baking Mix in place of the all-purpose flour. Any GF flour will do the job! Also, be sure that you use certified gluten-free oats in this recipe.
Blueberry Crisp

I followed this recipe for Bisquick Donuts using a box of Gluten Free Bisquick. It worked a treat!

Sugar Cookies
The best gluten free sugar cookies we've ever had! Instead of using colored sugar, we frosted our cookies and then added liberal amounts of sprinkles on top. :)

The recipe links, though, are fantastic. Since we're on the same page in terms of a child- centered, busy-Mama lifestyle, I knew when I saw your title for this post, you'd be including recipes that were no fuss and nutritous. Thanks SO much.

I never did see the Dump Cake recipe (I probably won't be making it any time soon, but the name fascinated me...)
