Pinning it Down {5} Avocado Chicken Salad



Welcome to Pinning it Down Tuesday! Do you find yourself pinning projects to Pinterest, but rarely getting around to doing them? I'm not supposed to be Pinning this week- I'm supposed to be in labor! (Okay, not really- I'm only 38 weeks. But I want my baby! And I'm just not very patient when it comes to snuggly perfect little newborn babies).

I pinned this recipe for Avocado Chicken Salad two weeks ago and I've already made it three times. It's good. Very good. (Make sure you add lots of lime juice, and don't skimp on the green onions or avocados, either.) It makes a great lunch, and I'm betting it'll be on our summer dinner menu as well. It's naturally gluten- and dairy-free, which is always a bonus. Yum!

    1. Thanks. :) I think my nesting has kicked into overdrive, though. One can only rearrange her blog so many times before she needs to step. away. from. the. keyboard.

      So I disassembled my vacuum cleaner last night and cleaned every single part of it instead.

  6. This looks great! There are two of us around here, out of 10, that eat avocados. I'm always trying to convince the others...this might just do it and worth a try, thanks! Pinned it!

  9. That salad definitely looks yummy...hmm, I have some avocados and chicken in the fridge, perhaps you just solved my what's for dinner tonight question. Best wishes with the baby, I know it is hard to wait...I am at 37 weeks right now myself. :-)

  10. That Chicken Salad sounds amazing! I will be making it soon. I've been making a tuna salad and some homemade mayo this week that i almost posted for Pinning it Down, but decided to share pictures of the (totally unhealthy!) Grenade Cake Pops we just made instead.

  12. Mmmm. Looks yummy. I need all the gluten free tips I can get. It's no problem at home, but out and about is killing me.

    1. Out and about is trickier- no doubt about it. Have you seen the gluten free registry (http://glutenfreeregistry.com/)? You may find some good spots near you there. And then I try to keep handy snacks in the car (trail mix, glutino breakfast bars, envirokiz rice bars, etc).

      And if you live anywhere near a Chick-Fil-A, they just announced gf chicken nuggets. We don't have one here, but I have it on good authority that they are good. Wendy's is also a decent fast-food option.

  13. I LOVE this stuff! I had it for lunch today and yesterday. It's also much better with the green onion :) I made sure I got some for this time around. I think I'll make more tonight for the rest of the week's lunches - YUMMY!
